Traditional cooking has many different meanings, but often means eating unusual dishes that are familiar to many people. For the Parmigiani, this dish is horse meat. A real Parmesan on Saturday for lunch eats "Pesto", that is horse meat minced and served raw. People add oil, balsamic vinegar, salt, pepper, and lemon to taste. If you want to try it, my advice is only one: Osteria dello Zingaro, which not only serves it raw, but also in hundreds of different ways. **ITA** Cucina tradizionale ha tanti significati, ma spesso significa mangiare cose inusuali, che sono invece familiari per molte persone. Per i parmigiani, questa cosa è la Carne di Cavallo. Un vero parmigiano, ogni sabato, per pranzo mangia il Pesto di Cavallo, che è carne di cavallo macinata e mangiata cruda. A seconda del gusto le persone mangiano il Pesto con olio, aceto balsamico, sale, pepe e limone. Se lo vuoi provare, il mio suggerimento è uno solo: Osteria dello Zingaro. Oltre al Pesto, serve la carne di cavallo in vari modi, che per me sono tutti buonissimi

A parma non si può non provare il cavallo pesto (se non sei vegetariano) e questo ristorante è il luogo perfetto. Io prendo sempre il tris di cavallo.
