This Modern British, Irish-influenced and well-travelled grill restaurant on Old Street roundabout is now led by Tarryn Bingle, following the sudden departure of chef-owner Niall Davidson. Sommelier Honey Spencer who worked at Noma Mexico, is in charge of a thrilling wine list, while the vast open kitchen is organised around a giant fire pit, often with a dissected hog positioned upright in it. New riffs are given to old classics: clams in pistachio beurre blanc; steak tartare with Guinness sauce; squid and bacon broth; and veal sweetbreads with cauliflower rarebit. Nuala appears to have marked a new stage in the evolution of British (and Irish) bistronomy.
