An evolution of American Cuisine. The Old World colliding with the New in an amazing way. Cookery based upon techniques that date back as early as the 18th century reinvented in a modern manner. America the melting pot of many cultures and great ingredients. The Menu will feature signature items at all times, based upon seasonality, with the ability to highlight dishes on a rotating weekly basis. Plates are meant to be shared with friends, an experience of variety, food taking you to somewhere you know, but places you’ve never been.

Secret Pizza is a New York-style pizza place with a casual feel. There's no signage in the front and it's not easy to spot if you were walking by. Hidden on the third floor of The Cosmopolitan of Las Vegas, you won't know this little eatery is there unless you follow the record-lined hallway. After passing album covers from Frank Sinatra, Elvis and other music notables on the wall, you're spilled into a tiny, standing room only place.

Hainan chicken is Chinese poached chicken dish generally unnervingly served at room temperature. Here, it's served slightly-warm (and deboned!) atop rice cooked in chicken fat, layering fowl flavors in a dish best described as the essence of chicken. Accompanied by a trio of housemade dipping sauces (Indonesian sambal, a slightly-sweet soy and an intensely addictive ginger-scallion) and what is quite probably the best chicken broth in town, the simple dish is simply comforting.

Inevitably, everyone wants to eat at a buffet, if only for the insanity of shoving unlimited food on a plate and in your stomach as possible. The biggest sits at Caesars Palace with nine live-action show kitchens spanning sushi and sashimi, Mexican, pizza, barbecue, and a center island dessert bar and more than 500 dishes served daily. Dishes change with the seasons, plus the buffet features at least 15 daily specials. Wear loose-fitting attire.

The 18-block area of downtown Las Vegas known as the Arts District first earned that designation thanks to the Arts Factory, a converted industrial building now home to various art galleries and shops. The Arts District grew from there, with other galleries and artists’ collectives sprouting up nearby and artists moving into the affordable housing close to their showrooms. The monthly First Friday helped popularize the Arts District as the center of Vegas’s alternative culture.

Las Vegas began downtown, which for years was the hub of both civic life and the tourist trade. These days, downtown is the place where tourists and residents mingle at classic hotel-casinos such as El Cortez, the Golden Nugget, the Plaza and the Golden Gate, which is the oldest hotel in Las Vegas (it opened in 1905). Most of downtown’s hotel-casinos sit along Fremont Street, part of which is covered by the cheesy but endearing Fremont Street Experience canopy, which displays light shows every night. East of Las Vegas Boulevard, Fremont is the place to visit if you’re in the hunt for trendy bars such as The Griffin and Commonwealth. Here, you’ll also find hip restaurants, including Le Thai and La Comida, and cultural outposts like The Bunkhouse Saloon and record store 11th Street Records.

Just 20 minutes beyond the glitz and glam is Boulder City, the town that built Hoover Dam. It doesn’t take long to feel its thrill-seeking spirit and welcoming charm. But it may take a while to see all of the recreational and outdoor activities. There are so many ways to explore.
