We will taste some of the following specialities (according to products' seasonal availability): Aperitivo with a glass of Valcalepio; Casoncelli: handmade pasta, shaped as a half-fool moon, created with a mixture of flours, filled with breadcrumbs, Parmesan cheese, beef meat, pork meat, and so much more; Foiade: it is the Sunday dish of the local tradition. Every small village around Bergamo has its own type of flour, favourite pasta shape and favourite topping; Polenta with lard and cheese; Grilled handmade bread with taleggio cheese; Gelato "stracciatella" flavour, which was indeed invented in Bergamo!
