Our afternoon will begin with a walk through historic Tra Que herb gardens. We'll get to know each other and I'll share about my experiences as a professional chef and my travels. Hope to hear about your story too! You'll also hear more about the unique farming practices of Tra Que gardens itself. We'll meet the farmer who provides us with our fresh produce everyday, and get to taste and pick a variety of herbs. After, we'll take a short walk to my restaurant where I'll prepare a 3-course custom vegetarian meal with the greens we just picked, paired with one-of-a-kind cocktails based on traditional Vietnamese flavors. We'll end the meal with some Vietnamese coffee or tea by the banks of the Hoi An river, surrounded by nature.

Born in France to Vietnamese and Chinese parents, raised in Boston Massachusetts, I'm an internationally-trained chef who's travelled all over the world exploring the craft of food and drink for the past thirteen years. My experiences range from cooking in Michelin-starred kitchens in California, cocktail bars in Tokyo, to cooking on wood fires and driving a food truck. I've been living in Vietnam for over a year now, learning deeply about the culture and cuisine.

The menu will be spontaneous and fully vegetarian or vegan, the choice is up to you. Non-alcoholic juice pairing options are also available. The experience will take about 2-2.5 hours. I am flexible about start times and days. If you are looking for a time slot not listed please reach out.
