My favorite Oaxacan market, Central Abastos, is a dizzying display of wholesale trade. It is easy to get lost in a sea of vendors, offering everything from fresh-ground chocolate and rare chiles to hand-woven baskets and regional ceramics. A familiar eye provides a sense of order to the place. As we navigate from street through marketplace, I will show you my favorite food stalls, introduce you to exotic fruits and vegetables, and guide you on a personalized shopping experience. We will start in my kitchen with chocolate y pan artesenal, take a private car (or taxi) to the market for a guided food and shopping tour, and return to my apartment for a lesson on salsa en molcajete. Afterwards, we will retire to the rooftop to share a mezcalito over botanas, where you can sample ferments and sweets that express the abundance of Oaxaca.
I am a James Beard nominated author who studies food cultures around the world. Over the past 3 years, I have worked alongside traditional cooks and producers to learn the foodways of Oaxaca. Here I run Cocina Nahual, a chef residency that promotes producers within the region, and Gordibuena Provisions, a product company that highlights the agricultural abundance of deep Mexico. This work will culminate in a second title that examines preservation methods around the world. I look forward to sharing the rich flavors and cultural pride of Oaxaca with you.

Most of our time will be spent at Central Abastos, the wholesale market that lives on the edge of the historical center. We will begin the tour in my kitchen and end the tour on my private rooftop that overlooks the city. My apartment is a 7-10 minute drive to the market.
Wear comfortable casual clothing. Do not wear flashy jewelry. Bring cash; there is no ATM. The market is safe but it is better to blend in like a local. You'll have a better experience that way.
