In a beautiful beachfront property that will also be your home during the trip, we’ll sample the finest chocolate and rum from the Caribbean with a tasting expert. Next, we’ll work alongside the owners of a historic cocoa farm to ferment and dry our own beans. We’ll travel to Richmond Fermentary to meet the people behind the beans and see how their work is key to flavor, then it’s off to a chocolate lab to learn the basics of chocolate making, from roasting to refining to molding your finished bars.

I'm a former BBC foreign correspondent of Jamaican parentage and when I discovered the amazing cocoa here on the island, I decided to start making my own chocolate. We've progressed from using a pestle and porter and a few beans roasted in our oven to a small manufactory that we call the Chocolate Box, a production kitchen overlooking the Caribbean Sea. We've since won a number of international awards for our bars and work alongside chocolate companies from around the world in sourcing the finest beans. I run the business alongside my wife who is a former tour guide, we've crafted the best of both worlds, a gastro-tour that goes beyond the surface of this incredible country famed for its cocoa by getting to see how chocolate is made from seed to bean to bar.
We'll stay in a beachfront property in Ocho Rios, a port town in northern Jamaica, and drive to chocolate facilities nearby. It takes just over 1 hour to drive from Kingston to Ocho Rios.
