体験できること

This online class brings you into my kitchen, where I'll lead you through the steps of making pizza dough from simple household ingredients. What begins as tap water, salt, yeast, oil, and flour (we'll work with whatever kind you have) soon becomes tender dough -- all you need is the right technique.

You don't need any fancy equipment to use this method. We'll mix our dough by hand so all you'll need is a large bowl and clean hands. I've provided a dough recipe so please come to class with each item measured and ready. Measuring by weight is most accurate but if you don't have a scale you can use cups and spoons. I'll make sure we all get the best result.

While the dough rests, I'll explain the big picture concepts, including the differences between various flour and yeast products. We'll get into fermentation science so you can understand why good dough takes time to mature.

This dough is designed for use within 1-3 days. I don't recommend using it within the first 6 hours after it's made. I'll give you links to videos to help you stretch, top, and bake or you can sign up for another experience with me that shows you how to do week.

  • 5 cups or 700g of Flour (All Purpose is fine but Bread Flour is even better)
  • 2 cups or 460g Water (chill it in the fridge for a couple hours)
  • 0.5 tsp or 2g Instant Yeast (slightly less if you're using Active Yeast)
  • 3 tsp or 17g Salt (fine sea salt or kosher salt is best but we'll use whatever you have)
  • 2 tsp or 10g Olive Oil (nothing fancy)

Such a great class! Scott is beyond expert in pizza and his tips and skills were incredibly valuable. I'd been making pizza dough in my bread machine till I took this class, but not any longer and the pizza dough I make now after Scott's class is a completely different level. This pizza class is a must. Scott is SO knowledgeable and you will have such an appreciation for pizza dough, flour and process! This is a super fun intro class on how to make pizza dough from scratch. Scott makes it accessible and easy for everyone. I highly recommend it!

Scott is a real professional! And also super friendly and super knowledgeable of all things pizza dough. I loved taking his class and learning the proper technique to knead dough while kneading alongside him. I was really impressed he could keep track of our group of about 7 student-groups over Zoom and remember ALL of our flour types, oven types, the timing of when we planned to make the pizza with toppings, and give us advice accordingly... all while being attentive to our technique and dough texture. Thanks Scott for your support of health care workers and supporting the hunger crisis through your work. Can’t wait to take your Stretch Top Bake class in a few days!

Scott was absolutely incredible. He's an expert in pizza and is knowledgeable about every topic, down from the nuances of the ingredients of pizza to the variability across climates and regions. I had the best time, and the two hours flew by. It was funny, engaging, and I learned a TON. Scott was very encouraging and really tailored the experience to how our dough was turning out. Plus, I can make some bomb pizza dough balls now. Highly highly recommend. One of my favorite Airbnb experiences ever.
