Raised in a Peranakan family, Straits-Chinese cuisine is something that I hold close to my heart. It brings together the best of the Chinese and Malay culinary worlds - the unabashed rich, spicy flavours of Malay curries with simple, delicate Chinese dishes. While many Peranakan dishes can be complex because there are many ingredients and steps - there are equally delicious ones - like the Yeye Crab Curry - that you can easily whip up in less than an hour.

Yeye Crab Curry , my great grandfather’s recipe that has been brought down through many generations. Seen on the dining table on every special occasions in my family. Hear my stories and experiences that i had from childhood as we cook this simple yet complex curry together.

We’ll kickstart the class with an introduction of the ingredients - how to prep them, what substitutes you can use and what other dishes you can cook with them.

During this session, I’ll run through the steps, and share tips and tricks as I go along. Have any questions? Feel free to ask them at the end of the demonstration.

An amazing, unique experience! Chef Malcolm was so warm and made sure everyone felt comfortable to actively participate. His passion for the Peranakan culture and food is contagious! Even though it was 11pm my time, I would join another session with Chef Malcolm any time he's offering the experience!

東京から参加しましたー。できたカレーはとっても美味しく仕上がりました。すべての材料を揃えることはできなかったですが、代替え品も書いてあってなんとか形になりました。 ホストのMalcomはレシピの背景や、彼自身の食に対する考えなどを惜しみなくシェアしてくれて、本当に素敵なホストさんでした。また新しいメニューで実施してくれるみたいなので、そしたらまた是非予約したいです。英語に問題ない方なら是非とも参加してほしいです。 Thank you so much for hosting this experience! The curry you taught us turned out really tasty!! Although I couldn't find all ingredients in my city, I was still able to enjoy cooking experience. Malcom was storytelling, shared his perspective on food, I really enjoyed it :) If he host with a different recipe, I would definitely book it again! Let me know, Malcom! Highly recommend!

Malcolm is a natural teacher and an excellent chef. Our family had the opportunity to visit Singapore for the first time last year and we had a wonderful dinner at Candlenut. When we saw this opportunity to meet Malcolm and take a cooking class with him it was a clear choice. The recipe Malcolm introduced, Yeh-Yeh's Crab Curry, was very intriguing because we do not typically pair crab with curry. We were delightfully surprised at how sweet and delicate the flavors blended. Malcolm not only introduced us to a family recipe from his great-grandfather that made this dish authentic and memorable, we were introduced to new ingredients and learned a new way to make curry using fresh natural ingredients. This is our first interactive cooking class experience. It turned out to be a lot of fun to be engaged in an activity with a renowned chef who is halfway around the world and be in a 'kitchen' with other participants from around the world. Malcolm was warm, enthusiastic and patient. My daughters also joined the experience from their homes and we all succeeded in making a dish we enjoyed. A wonderful intimate cooking class/demonstration that can be a shared experience with friends/family. Malcolm was warm, patient, and very knowledgeable. Learned a new recipe and basic techniques that we will use again and again.

Due to the time difference, I had to wake up very early as the class started at 5am my time. However, it was worth all the effort to wake up that early - interacting with and learning from Malcolm was unique, interesting, eye-opening and educational. From this experience, I get to appreciate my country’s food culture even more!
