This cooking class includes some of my family’s favorite dishes, such as Braised Pork Belly with Chestnut, but it also pays tribute to my parents’ passion for Chinese food therapy (think food that cleanses your blood) and serves as a 101 to basic Chinese cooking methods (think stir-frying and steaming). A lot is packed into this 3.5 hour hands-on class which we will conclude with feasting all the delicious food. During this 3.5 hours class, we will prepare and cook from scratch all 8 courses on the menu: Appetizer: - Pan-fried Burdock Root Matchsticks - Crunchy Woodear Mushroom Salad Main: - Stir-fried Bok Choy with Garlic - Spicy Hand-Shredded Chicken - Braised Pork Belly with Chestnut - Steamed Egg Custard - Fried Rice with Fermented Tofu Dessert: - Sweet Red Bean Cake Throughout the process, I will pause to introduce new and less-known ingredients that are still easily found in the area. I will share stories, health benefits, and tips-and-tricks behind each dish that came from my family and/or inspired by my travel.
I'm the founder of Dash of Soy, a local Seattle culinary school that focuses on sharing the love for simple, delicious, and healthy home cooking inspired by my family and all my travels. I left the corporate world after 20 years to focus on my passion for home-style cooking. Born and raised in Hong Kong, I have lived in Canada and US for ~30 years and traveled to ~50 countries. I grew up with authentic Chinese and pan-Asian food, am familiar with the ingredients in North America, while having developed a deep appreciation for food cultures around the world. Dash of Soy classes are one-of-a-kind: 1) family and well-tested recipes only, 2) small class size in a beautiful private kitchen with a farmhouse table, 3) wonderfully hand-drawn recipes, and 4) sharing of family and travel stories about food.
