Cañas & Tapas. These two words sum up the “aperitivo” culture in Madrid perfectly. Our creamy beer is only achievable through what we call “Tirar la caña” which literally means pouring away the beer. This ancient way of drinking is unique in the world, but careful, not everyone can serve a good caña, and thats what I am here for! I am a professional trained chef that decided to change pans and fires for the world of beers, wines and people, and I ́m not going to lie, it's one of the best decisions of my life. Now I have the palate of a retired chef, the nose of a sommelier and the communication skills of a natural born entertainer I am really keen on sharing my knowledge and learning with you guys, because us Madrid locals believe that for a Cañas & Tapas experience to be great, conversation and laughter are actually just as important as beer and food! But don´t worry, the food we will try is carefully selected from the best and not always most accesible places, at the end of the day the center is full of tourist traps, so rest at ease, we won´t be falling for any of those. My name is Alvaro and I was raised in Madrid. As a profesional trained chef with a degree in Culinary Arts Management I decided to venture into Enotourism in the french region of Saint Emilion, France where I really got to learn the winemaking (and tasting) process. Since then I have become really passionate about wine and food pairing. After over a decade traveling the world my life took a 180 degree turn when I moved to Perú and had a spiritual awakening, discovering how I spent many years running away from my home town Madrid. I came back to realize that my city has one of the most attractive gastronomic offers in the world, with a unique street atmosphere and the best of people. Since then It has become my mission to share my passion for food, wine and my home town city, offering a professional take, from a locals' point of view.

We will start off at El Mercado de San Miguel to warm up the senses. From there we will walk along the touristy Plaza Mayor until we make it all the way to the local La Latina. There are many hidden corners in between that I will make sure to point out. After touring around we will make our way back through a series of plazas and cathedrals to finish at La Calle Mayor.
